We signed up for this westsideorganics.com organic produce delivery service, in an effort to eat more healthily. Got our first delivery last week and so far, so good. There are a couple of things I don’t know if we’ll use (need to put them on our “don’t” list), but last night was a winner.
I cooked up a bunch of carrots to go with some chicken/turkey sausage. And then for dessert, I baked a delicata squash. Just sliced the one squash in half, scooped out the seeds, and baked it in the toaster oven for 40 minutes, sliced side down. Semi-following a recipe I’d found online, I filled the scooped-out hole with nonfat cottage cheese, sprinkled brown sugar over the top, and threw in a few sliced pecans. It was delicious and, I’m sure, nutritious. I need as many veggies as I can get these days, for sure, and getting the more nutrients for the least calories is the best.
